My husband lost a bet.
His consequence? Becoming a vegetarian for a week. And no… I didn’t make this bet with him. He bet a coworker that if Michigan won the NCAA Men’s Basketball tournament that said coworker (who doesn’t drink and is a vegetarian) would have to take a shot of whiskey with him. If Tom lost (aka Michigan didn’t win), Tom had to become a vegetarian for a week like said coworker. Well guess what? Villanova, not Michigan, won the NCAA Men’s Basketball tournament (cue my tears). Therefore, this week I’ve had to make him all vegetarian lunches and dinners. Not that hard for me since I usually make veggie dishes and then add meat but I think this has been deadly for Tom, he may have already lost 10 pounds lol.
When trying to think of recipes with tons of veggie flavor that would also keep him full… rice and pasta came to mind! For lunches, I made him crack broccoli pasta with garlic tomato sauce and for dinner we’ve had my favorite sweet potato and kale hash with peanut butter vinaigrette (a copy cat recipe from one of the restaurants I work for tehehe), thai quinoa salad topped with roasted salmon (me only), and this AMAZING spicy pineapple fried rice!
Other than the pineapple, it’s pretty standard fried rice ingredients like carrots, peas, peppers, egg, brown rice, soy sauce, etc BUT when you hit that juicy burst of pineapple… WOAH game changer. We add some sriracha to the mix and it totally creates another WOAH moment. Hence the word “spicy” in this recipe title.
Juicy, sweet, spicy, filling, flavorful, and delicious! What more could you need?!

spicy pineapple fried rice
Ingredients
- 1 tablespoon oil olive
- 1 1/2 cups diced fresh pineapple
- 1 cup frozen peas
- 1 cup matchstick carrots, roughly chopped
- 1 red bell pepper; cored, seeded, and diced
- 1 bunch green onions, sliced (green and white parts)
- healthy pinch sea salt and pepper
- 2 teaspoons garlic powder
- 2 eggs, beaten
- 2 cups cooked short grain brown rice
- 1 tablespoon soy sauce
- 1 tablespoon sweet chili garlic sauce
- 1 tablespoon sriracha
- juice of one lime
- roughly chopped cilantro leaves, garnish
Instructions
- Heat olive oil over medium heat in a non-stick skillet (enameled cast iron also works). Once the oil is hot, add the pineapple, peas, carrots, and pepper then stir to combine and cook for 5-7 minutes. Next, add the green onions, salt, pepper, and garlic powder then stir to combine and cook an additional 1-2 minutes.
Create a well in the middle of the skillet by moving the veggies to the parameters. Pour beaten eggs in this well and let cook for about 1-2 minutes (without touching!) then stir to mix in the egg and continue cooking for another 2-3 minutes. Next, add in the cooked brown rice, soy sauce, sweet chili garlic sauce, sriracha, and lime juice then stir to combine. Let cook another 5 minutes then remove from heat. Garnish with chopped cilantro and enjoy!
