Sheet pan meals are PERFECT for back to school time… which is where we are at today and I CANNOT BELIEVE IT. Like where did summer go?! Now, I know it’s still officially summer until September 22nd but back to school really feels like the unofficial start of fall… ya know?! Either way, sheet pan meals are quick and easy and everyone can appreciate them which is why I’m totally digging this sheet pan parmesan turkey & brussels sprouts! Juicy turkey breast tenderloins coated in parmesan cheese, panko, lemon zest, and thyme roasted to perfection using ONE SHEET PAN with brussels sprouts for a complete dinner meal in 45 minutes!
Sheet pan parmesan turkey & brussels sprouts recipe:
sheet pan parmesan turkey & brussels sprouts
Ingredients
- ⅓ cup grated parmesan cheese
- ¼ cup panko breadcrumbs
- zest of one lemon
- 1 tsp dried thyme
- healthy pinch salt and pepper x 2
- 24 oz turkey breast tenderloins
- 3 tbsps olive oil divided
- 24 oz brussels sprouts ends trimmed and halved
- 4-6 garlic cloves minced
Instructions
- Preheat the oven to 400F. Line a large baking sheet with parchment paper.
- Whisk together parmesan, panko, lemon zest, dried thyme, and a healthy pinch of salt and pepper until well combined.
- Place the turkey breast tenderloins on one side of the prepared baking sheet (they should only take up about ¼ of the baking sheet). Coat the tops with 1 tablespoon of olive oil then the parmesan panko mixture, using your fingers to pat down and help adhere the mixture to the turkey breast. You should use all of the parm panko mixture here.
- Arrange halved brussels sprouts and minced garlic on the remaining 3/4ths of the prepared baking sheet. Drizzle the remaining two tablespoons of olive oil over top of them then sprinkle with a healthy pinch of salt and pepper.
- Place baking sheet in the oven to roast until turkey breast reaches an internal temperature of 165F, about 30-40 minutes, making sure to toss the brussels sprouts halfway through baking.
- Remove the baking sheet from the oven, slice the turkey then serve it with the roasted brussels sprouts and enjoy!
