I know I know… more brussels sprouts?! SORRY BUT I LOVE THEM. Roasted or raw like in this fabulous Shaved Brussels Sprout & Apple Salad that might just be the perfect salad for your Thanksgiving this year 😉😉
Thanksgiving is all about turkey, mashed potatoes, gravy, stuffing… and all these other heavy dishes. Might I suggest adding a salad to your table to create a little lightness (and fiber lol)?! This delicious salad is loaded with raw shaved brussels sprouts (p.s. I promise they are good raw), diced apples, goat cheese, walnuts, and the most yummy vinaigrette that’ll make you want seconds and maybe thirds. Simple, flavorful, healthy, AND it doesn’t take up oven space on the big day… do it. YOU WON’T BE DISAPPOINTED.
shaved brussels sprout & apple salad
Ingredients
- 1.5 lbs brussels sprouts shredded (highly recommend using a food processor for this)
- 2 apples cored and diced
- 12 oz dried cranberries
- 3/4 cup chopped walnuts
- 8 oz crumbled goat cheese
for the dressing:
- 1/4 cup extra virgin olive oil
- 2 tbsps maple syrup
- 2 tbsps dijon mustard
- 2 tbsps white wine vinegar
- juice of one lemon
- 1 shallot minced
- 3 garlic cloves minced
- healthy pinch salt and pepper to taste
Instructions
- Add shredded brussels sprouts, diced apples, dried cranberries, chopped walnuts, and crumbled goat cheese to a large bowl then toss to mix until all ingredients are evenly distributed.
- Whisk together all dressing ingredients in a large measuring cup until completely incorporated and smooth.
- Pour dressing over salad then toss to coat. Let rest about 20 minutes before serving. If not serving right away, wait to stir in the dressing until then.
