Your next great lunch obsession is here… in the form of roasted red pepper & burrata sandwiches! These babies are loaded with flavor and CHEESE and only require 10 ingredients and 20 minutes. Hello lunch heaven!
You guys know how much I love pre-roasted and jarred red bell peppers and that hasn’t changed! Their flavor is outta this world good and it’s the perfect thing to use in lunch since it requires like NO PREP. I’ve also been pretty obsessed with burrata lately so it seemed like the perfect cheese to add to these delicious sammies. Also, don’t skip the thyme honey mustard dressing… it’s so simple to make and really brings this recipe up a notch!
Roasted red pepper & burrata sandwich recipe:
roasted red pepper & burrata sandwiches
Ingredients
- ½ tbsp olive oil
- 1 (12oz) jar roasted red bell peppers drained
- 4 large pieces fresh sourdough sliced in half and toasted
- thyme honey mustard dressing recipe below
- 1-2 handfuls baby spinach
- 4 burrata balls from one 8oz container
for thyme honey mustard dressing:
- ¼ cup extra virgin olive oil
- 3 tbsps honey
- 2 tbsps whole grain mustard
- 1 tbsp dijon mustard
- 1 tbsp lemon juice
- 1 tsp dried thyme
- healthy pinch salt and pepper
Instructions
- Heat olive oil in a skillet over medium heat. Once the oil is hot, add the roasted peppers then cook until hot, about 5 minutes, stirring occasionally.
- Meanwhile, toast your sourdough and prepare the dressing. Combine all ingredients for thyme honey mustard dressing in a measuring cup then whisk until smooth.
- Coat one side of each piece of toast with the thyme honey mustard dressing. Top one piece of toast with a few slices of hot roasted red pepper, a few baby spinach leaves, then a burrata ball. Finally, top with a second piece of toast and squish it down to break the burrata ball and let the cheese ooze out. Repeat with remaining ingredients and sandwiches and enjoy!
