Pear, bacon, and brie paninis… now say that 5 times fast!!!
Okay, I did it… really wasn’t that hard ha! Though, how weird is the plural form of panini? Paninis… LOOKS SO FUNNY. It also sounds funny, kind of like saying wasps. Did you say it? SO WEIRD RIGHT? Waspsssssss.
Sooo I know what you’re thinking (besides wtf is Adrienne rambling about above)… “brie? But she doesn’t eat cheese?” I do eat cheese sometimes and this is one of those times! Why? Because fruit and cheese are a match made in heaven… then add bacon and we’re in another galaxy!
Story time: I used to work down the road from Panera and ate it almost every day. I’ve always loved sandwiches, mainly because I love bread, but hot grilled sandwiches? Even better! Then one day I realized I could make these magical melts at home and my life has been forever better.
Clearly, this was back when I still ate cheese on the regular because cheese usually makes a panini. That being said… I think that the pear and bacon make this panini! Why do I say that? Because I tried this panini with tahini (now say THAT five times fast… panini with tahini) sauce instead of brie and it was AMAZING. But don’t worry, the brie version was equally as wonderful! The soft, juicy, and sweet pear is the perfect compliment to crispy, fatty, greasy, and smokey bacon. The two flavors are smushed together with ooey gooey brie! Don’t like brie? Try goat cheese instead! We also add a little spinach to lighten things up, only slightly though. Slices of rustic sourdough are then brushed in bacon grease and grilled to perfection to complete this delicious panini! Eat these for lunch or dinner, heck even breakfast with a side of fried eggs so you can dip the panini in runny egg yolk?! Oh dear, droooool. Okay, recipe time!
pear, bacon, and brie paninis
Ingredients
- 6 pieces thick center cut bacon
- bacon grease from cooking^
- 4 oz brie cut into thin slices
- 1 large pear cored and sliced
- small handful baby spinach leaves
- a dash of sea salt, pepper, garlic powder, dried thyme
- 4 slices sourdough
Instructions
- Cook bacon in a skillet to your liking! Pour bacon grease into a small bowl.
- Heat panini machine or ridged grill pan over medium-high heat.
- Using a pastry brush, lightly brush both sides of each slice of sourdough with bacon grease.
- Top one slice of sourdough with 2 oz of brie, half the slices of pear, a few pieces of baby spinach, and 3 pieces of bacon. Sprinkle a little sea salt, pepper, garlic powder, and dried thyme over the bacon then top with a second slice of sourdough. Repeat for second sandwich.
- Place one sandwich on the heated panini machine or ridged grill pan (with a heavy skillet on top to push down the sandwich). Cook for about 5-6 minutes (or 2-3 minutes per side if using grill pan). Remove from heat then repeat with second sandwich.
- Slice the paninis then eat!
Is wasps still suck in your head?! WASPS. AHHHH. In seventh grade, I had to read a page of our science book out loud to the class and it was all about wasps. I’ve been scared ever since.
