Flatbreads are soooo fun to experiment with! I just love throwing new and exciting and sometimes random toppings on flatbreads then baking them up to crispy cheesy perfection. And that’s exactly what happen with this peach pancetta flatbread. We’ve got apricot jam as the “sauce”, then sliced peaches, diced pancetta, sliced mozzarella, honey and dried thyme. It’s sweet and savory and I just loooooove that combo. Whip it up for dinner tonight or as an appetizer for your next get together 🙂
Peach pancetta flatbread recipe:
peach pancetta flatbread
Ingredients
- 1 (7oz) flatbread
- 2-3 tbsps apricot jam
- 1 peach pitted and thinly sliced
- 3-4 oz diced pancetta
- 6 oz sliced mozzarella log
- ¼ tsp dried thyme
- healthy pinch salt and pepper
- honey for drizzling
Instructions
- Preheat the oven to 400F. Line a baking sheet with parchment paper.
- Lay flatbread on the prepared baking sheet. Spread with apricot jam all over the flatbread, leaving a ½ inch border with no jam as crust. Top jam with peach slices then diced pancetta then mozzarella slices. Finally, sprinkle dried thyme, salt, and pepper over top then finish it off with a drizzle of honey.
- Bake in the oven until crust is golden and the cheese is melted, about 10 minutes then slice and serve!
