I know we’re coming in hot to the end of summer but peach season is still in full swing… So go grab some farmer’s market peaches (since there’s a recall on some grocery stores ones) and whip up this peach & goat cheese pasta salad for dinner or your next *socially distant* summer gathering! It’s sure to be a huge hit 🍑 😋
Let’s talk ingredients… It’s a pasta salad so we obviously need pasta. Any of your favorite short noodles will work here. I’m pretty obsessed with all the plant based pasta from Al Dente. I used the red lentil and sweet potato noodles here for some extra protein and fiber! Next we’ve got…

red onion and arugula for some bite
and lastly, some creamy dreamy goat cheese (swooooon)
Cook the pasta, heat the sausage and corn, then mix everything together in a huge bowl and boom >> tasty dinner or perfect side dish!! Serve right away while the sausage and corn are warm or refrigerate and serve chilled later. Honestly, I thought it tasted wonderful when first mixed but then the day two flavor was also outta this world good. You choose 😉
peach & goat cheese pasta salad
Ingredients
- 8 oz of your favorite short noodle pasta I used al dente's Red Lentil + Sweet Potato pasta 🙂
- 10-14 oz pre-cooked chicken sausage diced
- 1 15oz can corn, drained
- 4 tbsps extra virgin olive oil divided
- juice of one lemon
- 1 tsp garlic powder
- 1/2 tsp dried basil
- healthy pinch salt and pepper
- 2 large ripe peaches cored and diced
- 1 pint cherry tomatoes halved
- 1/2 red onion diced
- 1 (5oz) package baby arugula
- 8 oz crumbled goat cheese
Instructions
- Cook pasta according to package instructions then drain.
- While pasta is cooking, heat one tbsp of oil in a large skillet over medium heat. Once oil is hot, add the diced chicken sausage and corn. Cook until sausage and corn are warmed through, about 6-8 minutes, stirring occasionally.
- Meanwhile, whisk together remaining 3 tbsps olive oil, garlic powder, dried basil, salt, and pepper in a large bowl. Add diced peaches, halved cherry tomatoes, diced red onion, and baby arugula to the bowl to toss to combine.
- Once the pasta, sausage, and corn are done, add them to the bowl too along with the crumbled goat cheese. Toss everything together again to make sure it’s all fully incorporated then serve!
