I live right around the corner from my Dad (for now – cue tears for us moving) and sometimes I head over there around 9pm to play HQ because he’s a genius (yes, I know we are ridiculous). SO the other week, I brought him these delicious and really bad for you oatmeal chocolate peanut butter bars whoops! He and my Brother consumed them in like 3 days?… THEY WE’RE THAT GOOD.
OH! And sorry for being MIA last week y’all… life has been crazyyyyyy! We’ve got all this house selling and buying business going on plus Tom has been traveling a lot for work (Germany, Denmark, London, Amsterdam, Chicago, etc–he’s a busy boy!) and then this past weekend I went up north for my besties bachelorette party. I apologize if any of y’all had to watch my Instagram story lol…
HOUSE UPDATE:
So our house passed inspection and appraisal and now we are just waiting to close on May 15th! But the even better news is that we put an offer on a house this past Saturday and… IT GOT ACCEPTED. This was the third offer we’ve put up (the Ann Arbor market is nutz–I consider us lucky that it only took us three times). The first one we ended up pulling and the second one we lost out on and I was SUPER SAD. But I kept making myself remember that everything happens for a reason and now we got an offer accepted on a place that I like EVEN BETTER wooo!! Inspection is this Thursday. Fingers crossed for good results! Maybe I’ll take y’all along on Instastory… just maybe. I don’t want to jinx anything though because so much can happen between now and closing… but I’ll keep y’all posted 🏡 ❤
Back to oatmeal chocolate peanut butter bars! These babies contain like all of my favorites things… butter, brown sugar, old fashioned oats, dark chocolate, peanut butter, and flakey sea salt. How could they possibly be bad?! Spoiler… they aren’t! Though… I guess that isn’t really a spoiler and they actually are somewhat bad for you… oops! Oh well, sometimes we all need to live a little. Or love A LOT and eat a bunch of these like my Dad and Brother.
Oh p.s. sooo I know I’ve talked about my Dad in this post BUT I’m sure YOUR MOM would love these for Mother’s Day. They are quick and easy but still super thoughtful and yummy–she’ll love ’em! Just sayin’

oatmeal chocolate peanut butter bars
Ingredients
- 1 cup unsalted butter
- 2/3 cup packed dark brown sugar
- 3 1/3 cups old fashioned oats
- 1 cup dark chocolate chips
- 2/3 cup peanut butter
- healthy pinch or two of flakey sea salt
Instructions
- Line an 8×8 (inch) baking dish with parchment paper.
- Melt butter and brown sugar in a medium saucepan over medium heat, whisking until the sugar dissolves. Cook until mixture is bubbling then let it simmer for two minutes. Remove from the heat then stir in oats until completely combined.
- Place dark chocolate chips in a microwave-safe bowl then melt in the microwave according to package instructions. Once melted, stir in peanut butter until completely combined and smooth.
Press half of the oat/sugar mixture into the prepared baking dish. Spread the melted chocolate/peanut butter mixture over top using a rubber spatula. Gently press the remaining oat/sugar mixture over top then sprinkle with flakey sea salt. Let cool completely at room temp or refrigerate for a couple hours before slicing!
