oatmeal chocolate chip cookies

Ingredients
- 1 3/4 cups all-purpose flour
- 3 cups old fashioned rolled oats
- 1/4 cup ground flaxseed
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1 1/2 sticks (12 tbsps) unsalted butter at room temp
- 1/4 cup coconut oil at room temp
- 1 cup white sugar
- 1/2 cup brown sugar
- 1 large egg + 1 large egg yolk at room temp
- 2 tsps vanilla extract
- 10 oz dark chocolate chips
Instructions
- Preheat your oven to 350F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, oats, flaxseed, baking powder, baking soda, cinnamon, and salt until well combined.
- In the bowl of your stand mixer (or a large bowl with a hand mixer), cream together your butter and coconut oil until smooth (about 2-3 minutes on medium speed).
- Next, add in the sugars then cream together on medium-high until fluffy (about 3-4 minutes). Add in the egg, egg yolk, and vanilla then beat until well combined.
- Change the speed of the mixer to low then gradually add in the dry ingredients from step two until just combined and mixed.
- Finally, stir in the chocolate chips until they are evenly distributed.
- Form the dough into 1 inch balls and place on the prepared baking sheets about 1-2 inches apart.
- Bake for 12 -16 minutes or until the bottoms are just golden. Repeat until all the dough is made into delicious cookies!
