These were totally supposed to be chicken wings but my Instacart person got me the wrong chicken parts ha! Either way… these lemon garlic feta buffalo chicken wings/drumsticks ARE BOMB. I tested them both ways (unfortunately got the drumsticks on photograph day) and the flavor is so good and crisps up on the chicken perfectly. We enjoyed them for dinner but they are 100% ready for your next party/tailgate/cookout, you name it!
p.s. once it’s summer and not like -10 degrees out I’ll test this recipe on the grill and update it!
Let’s discuss our marinade/glaze:
First, we let our yummy chicken wings marinate in a mixture of olive oil, lemon juice and zest, minced garlic, sea salt, black pepper, onion powder, and dried oregano until nice and juicy. Then we partially bake them before topping the wings with a delicious glaze made with olive oil, buffalo sauce, honey, lemon juice, garlic powder, and cayenne pepper! So good right?! Finally, we top the fully cooked and crispy wings with minced parsley and crumbed feta and BOOM THEY’RE AMAZING.
lemon garlic feta buffalo chicken wings/drumsticks
Ingredients
for the marinade:
- 3 lbs chicken wings flats and drumettes separated (or drumsticks lol)
- ½ cup olive oil
- 1 lemon zested and juiced
- 4 garlic cloves minced
- 1 tsp fine sea salt
- 1 tsp black pepper
- 1 tsp onion powder
- 2 tsps dried oregano
for the glaze:
- ¼ cup olive oil
- ⅓ cup frank’s buffalo sauce
- 3 tbsps honey
- 1 lemon juiced
- 1 tsp garlic powder
- ½ tsp cayenne pepper
- healthy pinch salt and pepper
for serving:
- ¼ cup minced parsley
- 4 oz crumbled feta
Instructions
- Add all marinade ingredients (chicken flats and drumettes through oregano) to a large ziploc bag then seal and shake. Refrigerate at least 2 hours.
- Preheat your oven to 400F. Line two large rimmed baking sheets with parchment paper.
- Remove wings from a ziploc bag then place them on the prepared baking sheets, making sure they aren’t too crowded. Bake until the wings are starting to turn golden, about 40 minutes, flipping halfway through.
- Meanwhile, whisk together all the glaze ingredients (olive oil through pepper).
- Remove partially cooked wings from the oven then brush the glaze over top. Place back in the back then bake until deeply browned and crisp, about another 20-30 minutes (should reach an internal temperature of 165F).
- Remove wings from the oven. Place them on a serving platter then sprinkle minced parsley and crumbled feta over top then serve!
