To me, greek salads are synonymous with ALL OF TOPPINGS. Think olives, chickpeas, artichoke hearts, cucumbers, peppers, radishes, beets, feta, onions, tomatoes, pita wedges, creamy dressing…

I decided to spice up the traditional greek salad with KALE. Why? Because I freaking love kale. I really really do. It’s moment in the sun might be over but I still love it. Kale is so crunchy and delicious especially when you massage it right 😉 AND it’s loaded with all the amazing things like protein, fiber, vitamins A, C, and K, folate (a B vitamin key for brain development), omega-3 fatty acids, and more! Wonderful news right?! Right.
In addition to kale, I also spiced this greek salad up with some homemade greek dressing because I promise it’s SO MUCH BETTER than store bought and takes less than 5 minutes to make. You must try it!!! Trust me.
I like to mix up easy salads like this and take them for lunch for the week! My kale greek salad keeps great in little meal prep containers and is so easy to eat on the go! Though, I do usually wait to add the dressing until I’m ready to eat. Sometimes I even top it with grilled chicken if I want some added protein!

KALE GREEK SALAD
Ingredients
- 10 oz baby kale, roughly chopped
- 1 english cucumber, diced
- 1 pint cherry tomatoes, halved
- 1 small red onion, diced
- 1 (15oz) can quartered artichoke hearts, drained
- 1 (15oz) can chickpeas, drained
- 1 cup kalamata olives
- 1 cup crumbled feta cheese
homemade greek salad dressing (yields 2 cups)
- 1/2 cup olive oil
- 2 tbsps apple cider vinegar
- 5 garlic cloves
- 1 tsp dried oregano
- 1 tbsp chopped fresh dill
- healthy pinch sea salt and black pepper
- 1 cup crumbled feta cheese
- 1 cup buttermilk
Instructions
Make your dressing: In a blender or food processor, combine dressing ingredients then pulse until completely smooth.
- Combine kale through feta in a large bowl then toss to combine. Add greek dressing then gently toss salad again.
