Juicy sesame chicken & corn stir fry that is absolutely perfect for summer nights! Plus it comes together crazy fast with minimal ingredients! Win win win. Right?! We start with boneless, skinless chicken thighs (my personal fave) that we coat in sesame oil and cornstarch to get that nice golden asian chicken look then cook it up to juicy perfection in more sesame oil. We then sauté some fresh corn and red onion with it along with a little sweet chili garlic sauce and sriracha… yum! Serve this delish stir fry mixture over coconut rice and BOOM FAB DINNER. Ingredients
- 1-1 ¼ lb boneless, skinless chicken thighs sliced into 1-inch chunks
- 3 tbsps sesame oil divided
- 3 tbsps cornstarch
- healthy pinch salt and pepper
- 6 garlic cloves minced
- 1 (15oz) can corn drained
- 1 red onion thinly sliced
- 1 tbsp sweet chili garlic sauce
- small squirt of sriracha
- garnish: 2 green onions green part thinly sliced
for the coconut rice:
- 1 cup white rice
- 1 (15oz) can coconut milk
- 1/4 cup water
- 2 tbsps freshly minced cilantro
Instructions
- Add chicken thigh chunks, 1 tbsp sesame oil, cornstarch, and a healthy pinch of salt and pepper to a medium bowl then toss until chicken is well coated.
- Heat remaining 2 tbsps sesame oil in a large non-stick skillet over medium heat. Once oil is hot, add the chicken pieces then cook until golden and no longer pink, about 8-10 minutes, tossing often to cook all sides.
- Meanwhile, make your coconut rice: Combine rice, coconut milk, and water in a small saucepan. Bring mixture to a boil over medium heat. Once boiling, reduce heat to low then cover and cook for about 15 minutes or until rice has absorbed all the liquid. When done, stir in the minced cilantro.
- Once the chicken is no longer pink, add in the garlic, corn, red onion, sweet chili garlic sauce, and sriracha to the skillet then toss to mix and let cook until onions are soft and fragrant, about 6-8 minutes.
- Serve chicken corn mixture over coconut rice then top with thinly sliced green onions and enjoy!
