Yes, you read that correctly. Spicy goat cheese queso is the star of this dish so the chicken tacos are a side… Just make this recipe. You will be amazed. And sweating… Because this queso is HOT. Spicy hot. 😉
Sooo I made this recipe last Friday for game night with friends! And unless they were lying to me… They loved these tacos and I bet you will too!
Recipe time:
spicy goat cheese queso + chicken tacos
Ingredients
- 3 pounds boneless, skinless chicken thighs
- 1 sweet onion sliced
- 2 tsp smoked paprika
- 1 tsp salt
- 2 tsp pepper
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- 2 tsp olive oil
- 3 limes sliced into wedges
- flour or corn tortillas I used 6inch flour tortillas but 8inch would have worked better – ours were bursting at the seams
- chopped tomatoes* I used 1 pint of grape tomatoes chopped in fourths
- sliced red onion* I used a half of a red onion
- sliced avocado* I used 2 large avocados
- extra goat cheese for topping
- extra lime wedges for squeezing over your tacos
- cooking spray
for the queso:
- 2 tbsp unsalted butter
- 1 jalapeño pepper minced
- 5 garlic cloves minced
- 1 tbsp flour
- 1/2 cup milk
- 6 oz crumbled goat cheese
Instructions
- Preheat oven 425F.
- Coat a 9×13 baking dish with cooking spray and cover the bottom with sliced sweet onions.
- Mix all the spices together in a small bowl. Pat each chicken thigh dry with a paper towel then cover with spice rub.
- Set the chicken thighs in the baking dish on top of the onions and place lime wedges between each thigh. Cover baking dish with foil and bake for 45-60 minutes (mine took 60 minutes). Remove chicken from the oven (once fully cooked) and start making goat cheese queso. Shred chicken using two forks (and annoy your boyfriend with scraping sounds).
- Make your queso: Heat a small sauce pan over medium heat. Add butter, jalapeño and garlic and let cook for about 2 minutes (until sizzzzzzzzling). Add flour and cook another 2 minute (until golden and bubbly). Pour in milk, reduce heat to low, and whisk. Once slightly thickened, add goat cheese and stir until melted. Taste and season the queso with salt and pepper.
- Taco assembly: Heat tortillas up in the oven for a couple minutes. Spread shredded chicken on tortilla and top with tomatoes, onions, avocado, goat cheese queso, crumbled goat cheese and lime juice.
- ENJOY (and sweat… like I said before eek).
