Writing blog posts is hard.
I sit here and I’m like… what should I say to these internet people reading my blog? Should I ramble about my life and/or tell you how I came up with these healthy-ish chocolate banana muffins? The story isn’t that great lol. Basically, I wanted healthy banana muffins as a work snack a couple weeks back but then decided to spice things up a bit with cocoa power and chocolate chips to make them extra chocolatey and boom… this recipe was born! I know these muffins may just seem like ordinary “healthy” chocolate banana muffins but I promise you that they are a lot more than that!!

Other than meal prepping my life away (#ireallywanttolosethreepounds – name that movie), life is pretty normal around here. Getting ready for spring to finally show up! I know every midwesterner says this like every year but what the crap is this snow in April bologna? April showers might bring May flowers but April snow is a total NO NO NO.
Okay… enough rhymes–it’s recipe time! 😉
chocolate banana muffins
Ingredients
- 3 extra ripe bananas, peeled and smashed
- 1/4 cup agave
- 1 teaspoon vanilla extract
- 1 large egg
- 2 tablespoons extra virgin olive oil
- 1/2 cup coconut yogurt (normal yogurt works too!)
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1/2 cup chocolate chips (dairy free if needed)
Instructions
- Preheat oven to 350F. Line a muffin tin with liners or coat with cooking spray.
Whisk together smashed bananas, agave, vanilla extract, egg, olive oil and yogurt in a large bowl until well combined. Next, mix in the flour, cocoa powder, baking soda, and salt until well combined. Using a rubber spatula, fold in chocolate chips.
Using a spoon or cookie scoop, fill each muffin hole 2/3rds the way full with batter. Sprinkle a few extra chocolate chips on top of the batter (for good measure). Bake for 25-28 minutes or until toothpick placed in the center of a muffin comes out clean! Enjoy 🙂
