In my opinion, the hardest part about making quiche is the crust (it’s also the least healthy part) SO I decided to make one without a crust with a whole bunch of ham and smoked gouda! The result >> extra fabulous!
But before I get to more about this delicious ham and gouda quiche… I need to tell y’all that I’m watching the Fyre Festival Documentary and OMG it’s a nightmare and so hard to watch but I CANNOT LOOK AWAY. It’s also so sad… the amount of people affected by this ridiculous fraud.
OH and another update >> did you see my life update post on Instagram?!
If not… guess what?! I turned 30 last week AND I’M PREGNANT WOOOOO. Baby Brady is due in August!!! Tom and I couldn’t be more excited. I started the second trimester this past Saturday which is super exciting! Overall, I’ve had very few pregnancy symptoms and like zero morning sickness. I’ve basically felt amazing other than being very hungry and wanting to eat everything all the time. Also, no bump yet (other than bloat ha) but I’ll definitely start posting updates soon. I have gained 7lbs already though but I’m like 95% it’s all in my boobs (sorry TMI). OH and lastly, I won’t really be posting much about Baby Brady on my Appetites Anonymous Instagram but if you do want to follow along, make sure to follow my personal account @adriebrady!
OKAY back to ham and gouda quiche. What do y’all normally eat for weekday breakfasts? I’m really bad about eating breakfast because I’m not a morning person and never have enough time to make breakfast in the mornings before work. I prep celery juice on the weekends and usually a large breakfast item (aka quiche) that I can divide up, package, then grab while running out the door on the way to work. This ham and gouda quiche totally fits that bill for me!
I’m not usually a ham person but OMG for some reason the ham flavor combined with smoked gouda is giving my life right now. Maybe it’s a preggo thing BUT you must try it!
HAM AND GOUDA QUICHE
Ingredients
- 1 tbsp olive oil
- 1 yellow onion, diced
- healthy pinch of sea salt and black pepper
- 8 oz ham steak, diced
- 12 large eggs
- ½ cup milk
- 1 tsp dijon mustard
- 6 oz gouda, shredded
Instructions
- Preheat oven to 375F. Coat a 9×13 baking dish with cooking spray or olive oil.
- Heat olive oil in a large skillet over medium heat. Once oil is hot, add the diced onion plus a healthy pinch of sea salt and black pepper then stir and sauté for about 6 minutes or until onions are translucent. Add diced ham to the skillet then cook an additional 6 minutes. Remove skillet from heat.
- Whisk together eggs, milk, and mustard in large bowl until well combined. Stir in the shredded cheese then the ham/skillet mixture.
- Pour contents of the bowl into the coated 9×13 baking dish and bake for 40-45 minutes or until eggs are completely set.
Now don’t worry, this isn’t going to become a baby blog or anything ha. Also, sorry for being slightly MIA for the last month. We’ve had A LOT going on around these parts lol.
