This 30 MINUTE ground turkey stir fry noodle skillet is a new dinner favorite in our house! It’s been making the rounds on our menu a lot lately so I figured it was a good one to share 🙂

Ingredients
- 12 oz udon noodles cooked according to package instructions
- 2 tbsps toasted sesame oil divided
- 1 lb lean ground turkey
- 4 garlic cloves minced
- 3 bell peppers (I used red, orange, and yellow) cored, seeded, and thinly sliced
- 2 cups matchstick carrots
- 2 cups finely shredded green cabbage
- 1 bunch green onions thinly sliced; white and green parts divided
- 1 tbsp soy sauce
- 1 tbsp hoisin sauce
- small squirt sriracha
- sprinkle of toasted sesame seeds
Instructions
Cook noodles according to package instructions.
- Heat one tablespoon sesame oil in a large skillet over medium heat. Once the oil is hot, add the ground turkey then cook until almost browned, 5-7 minutes, breaking it up with your utensil as it cooks.
- Before the turkey is fully browned, add the minced garlic, sliced bell peppers, matchstick carrots, shredded cabbage, and sliced white parts of the green onions to the skillet along with the remaining one tablespoon sesame oil, soy sauce, hoisin, and sriracha. Toss to mix everything together the cover and cook and veggies are tender, about 5-8 minutes, stirring occasionally.
- Once the veggies are tender, remove the lid then stir in the cooked noodles until everything is well combined. Let everything cook for an additional 2-3 minutes then remove from heat.
- Divide skillet mixture between bowls then top with sliced green parts of the green onion and a sprinkle of toasted sesame seeds.
