It’s chilly outside so it’s time for CHILI in your belly >> specifically THIS slow cooker Ground Chicken & Sweet Potato Chili 🙌🙌🙌🙌
ground chicken & sweet potato chili (slow cooker)
Ingredients
- 2 lbs lean ground chicken
- 2 (15oz) cans kidney beans drained
- 2 (15oz) cans diced fire-roasted tomatoes
- 1 (15oz) can low-sodium chicken broth
- 2 medium sweet potato peeled and finely diced
- 2 tbsps adobo sauce from canned chipotle chiles in adobo sauce
- 3 tbsps soy sauce
- 3 tbsps chili powder
- 1 tbsp sea salt
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 2 tsps dried oregano
- 2 tsps ground cumin
- 1/2 tsp ground cinnamon
- for serving: shredded cheddar cheese, sour cream, sliced green onions, and/or avocado slices
Instructions
- Place all ingredients except for the “for serving” stuff in the bowl of your slow cooker (so ground chicken through cinnamon). Cover with the lid then cook on low for about 8 hours, stirring every once in a while if you can.
- Divide chili between bowls, top with shredded cheddar cheese, sour cream, sliced green onions, and/or avocado slices!
