Peaches, fresh green beans, halloumi, and pesto… could this grilled peach & halloumi salad BE ANYMORE SUMMERY?! I think not. But seriously, mixed greens and roasted green beans topped with grilled peaches and halloumi, lemon pesto sauce, toasted pine nuts and fresh basil… YUM. Summer salad heaven. Fresh, delicious, quick, and easy… let’s do this!
Grilled peach & halloumi salad recipe:

Ingredients
- 6 oz fresh green beans ends trimmed
- 1 tbsp olive oil
- healthy pinch salt, pepper, and garlic powder
- 3 ripe peaches halved and pitted
- 6 oz halloumi
- olive oil cooking spray
- 2 tbsps prepared pesto
- juice of one lemon
- 1 tbsp honey
- 3 oz mixed greens
- ⅓ cup toasted pine nuts
- maldon sea salt
- fresh basil
Instructions
- Preheat the oven to 400F. Line a baking sheet with parchment paper.
- Arrange green beans on the prepared baking sheet then drizzle with olive oil, salt, pepper, and garlic powder. Toss to coat then roast in the oven until just starting to crispy, about 15 minutes, tossing halfway though.
- Heat a large cast iron grill pan (or grill) over medium-high heat then coat it with cooking spray. Once the pan is hot, add the peach halves (open flesh side down) and halloumi. Grill the peaches on for 5-7 minutes or until nice grill lines appear. Flip the halloumi slices after about 5 minutes then grill for another 5 minutes on the second side. Once done, remove both the peaches and halloumi from the pan then slice the halloumi into smaller slices for serving.
- Meanwhile, whisk together pesto, lemon juice, and honey until smooth.
- Arrange mixed greens on a serving platter then top with roasted green, grilled peaches, and grilled halloumi slices. Finally drizzle pesto sauce over top of top then garnish with toasted pine nuts, maldon sea salt, and fresh basil then enjoy!
