Fruity Oatmeal Bake that’s perfect for easy weekend brunch or Sunday meal prepping to eat all week long!
Oatmeal is one of my favorite healthy breakfast items! Why you ask?!
JK, I know you didn’t ask but I’m going to tell you anyways ha. Oats/oatmeal are a whole grain food rich in fiber and carbs (p.s. carbs are not bad for you). They are also higher in protein and fat than most other grains plus contain many vitamins and minerals! Lastly, oats can help lower bad cholesterol and blood sugar levels… win win win!
Oat discussion… check! So what else is in this delicious Fruity Oatmeal Bake? Fruit, duh. I used bananas and peaches but honestly you can use whatever fruit you choose, just make sure the amounts are similar. We’ve also got some yummy ingredients like vanilla yogurt, walnuts, honey, vanilla, and all the best baking spices (cinnamon, nutmeg, allspice, etc). You ready for this recipe? GOOD.

Ingredients
- 2 cups rolled oats
- 1/3 cup chopped walnuts
- 2 tsps ground cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1/2 tsp ground allspice
- 2 cups milk
- 5 oz vanilla greek yogurt
- 2 tbsps coconut oil melted
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 large banana peeled and diced
- 2 peaches pitted and diced cup
Instructions
- Preheat the oven to 400F. Coat a 9×13 baking dish with cooking spray.
- Mix together rolled oats, walnuts, cinnamon, baking powder, salt, nutmeg, and allspice in a large bowl until well combined. Add in milk, yogurt, melted coconut oil, honey and vanilla to the same bowl then stir until evenly incorporated. Finally, mix in the diced banana and peaches.
- Pour mixture into the prepared baking dish then bake about 50 minutes or until golden on top and firm to the touch.
