I love avocado toast. Yes, I’m that basic and I don’t care… I love it soooo much and eat it at least 5 times a week. The other day I wanted to up my protein game so I decide to whip up a quick and easy egg salad recipe to top my avocado toast with and OMG WAS IT GOOD. SO GOOD. So now egg salad avocado toast is my new thing. And you should jump on board this delicious train lolzzzzz.
Egg salad avocado toast recipe:

Ingredients
for the egg salad:
- 6 hard-boiled large eggs peeled and diced
- ½ red bell pepper cored, seeded, and minced
- ½ cup minced celery about ½ a rib
- 2 garlic cloves minced
- ¼ cup plain greek yogurt
- 2 tbsps freshly chopped dill
- 1 tbsp lemon juice
- 1 tbsp whole-grain mustard
- 1 tbsp dijon mustard
- 2 tsps honey
- 2 tsps sriracha
- healthy pinch salt and black pepper
for the avocado toast:
- 4 slices your favorite fresh bread toasted
- extra-virgin olive oil
- 2 avocados pitted and sliced
- healthy pinch fine sea salt and black pepper
- freshly minced parsley or micro pea shoots
Instructions
- Combine all the “for the egg salad” ingredients in a medium bowl then mix until well combined.
- Meanwhile, toast your bread!
- Coat the tops of the toasted bread with a little olive oil then avocado slices, slightly smashing them into the bread with a knife. Top avocado with a large spoonful of egg salad from step one.
- Finish everything off with a healthy pinch fine sea salt and black pepper plus a sprinkle of minced parsley or micro pea shoots.
