okay… dark chocolate dried apricots! so easy and the perfect little snack to satisfy your sweet tooth. i have a big sweet tooth soooo i needed a few of these to satisfy mine. i used to think/say I didn’t have a sweet tooth to be cool maybe? but that was a lie. i love sweets. sigh.
this recipe is so simple yet so rewarding in both the sweet and salty categories! the texture is also my favorite, hard dark chocolate shell with a chewy apricot center! plus a little sprinkle of coarse sea salt on top to complete these beauties!
i have a question… do y’all prefer more text or photos in blog posts? when i read food blogs, i love the photos and only sometimes read the text. so i generally don’t write too much and let my photos do the talking. but sometimes i want to talk to y’all about non-food stuff. like movies. those of you who know me know that i make it my duty to see all the oscar nominations in the categories of best picture, actor/actress in a leading role, actor/actress in a supporting role, and last but certainly not least achievement in directing before oscar night!! so yes, it’s a lot of movies. when the nominations were released, i had 12 movies to see as i had already seen la la land (amazing) and hell or high water (fantastic). since then I have seen captain fantastic, manchester by the sea, jackie, and fences – all four were wonderful in different ways. i was going to go on a movie date with myself tonight since tom is in baltmore on the review panel of a grant committee (he’s so impressive :)) to go see hidden figures. i was so excited to eat buttery popcorn and drink a cold fountain coke but of course… tom wants to see this movie (and all the remaining movies i have to see) so i have to wait… that butthead! i still need to see: hidden figures, arrival, hacksaw ridge, lion, moonlight, nocturnal animals, loving, and florence foster jenkins before february 26th. i do can it! in case you were wondering, i usually try to see the rest of the movies nominated in other categories like achievement in cinematography, achievement in makeup and hair-styling, original score, achievement in production design, adapted screenplay, original screenplay, animated feature film, achievement in costume design, documentary feature, etc throughout the next several months (movies like: silence, allied, fantastic beasts, a man called ove, passengers, hail! caesar, doctor strange, rogue one, the lobster, 20th century women, etc). it’s funny because i really wouldn’t consider myself a movie buff but i love award season and love seeing all the amazing movies that get nominated. maybe i am a movie buff?! do y’all do this?! what oscar noms have you seen?! what did you think of them?! do you love the oscars?! i love them! and they’re always on in my birthday month because it’s the best month. but seriously, give me all your thoughts!! okay enough rambling… recipe time!
Dark chocolate dried apricot recipe:
dark chocolate dried apricots
Ingredients
- 1 2/3 cup dairy-free dark chocolate chips about 10 oz
- 50 dried apricots
- coarse sea salt
Instructions
- Line a baking sheet with parchment paper.
- Melt the dark chocolate. I recommend using a double boiler, however, you can melt it any way you please.
- Double boiler method: any heatproof bowl such as stainless steel or glass will do, just nestle it over a saucepan of simmering water, making sure the water is not touching the bottom of the bowl. Place the chocolate chips in the bowl, stirring over the simmering water until almost entirely melted.
- Using a toothpick, dip each dried apricot into the melted chocolate and swirl it around until it’s completely coated.
- Drop the chocolate covered apricot on the parchment paper then sprinkle some sea salt on top.
- Repeat with remaining apricots. Let the dark chocolate covered apricots cool and harden on the parchment paper for about one hour. Then place them in a tupperware and keep in the refrigerator.

I loooooove dried apricots (have you ever had the dried fancy ones from Trader Joe’s? the best!), and covering them in chocolate is the very next best thing. Craving these so badly right now.
