I love experimenting with chocolate chip cookies and seeing how much extra crap I can throw inside them and still have them turn out amazing ha! I haven’t failed yet and these dark chocolate chip pretzel caramel cookies are my new favorite creation!
These all started because my mother-in-law brought Killian some of these Snyder’s extra mini pretzels that are beyond adorable but also the perfect size and my favorite new type of pretzel. SO SNACK-ABLE. Any who, I was snacking on these and thought they would fit perfectly and taste amazingggg inside a chocolate chip cookie and boy WAS I RIGHT. I also loaded these cookies up with dark chocolate chips because they are the best form of chocolate chips plus rolled oats for chewiness and caramel pieces for more chewiness. Honestly, these babies are soft, chewy, sweet, and salty with a bite of pretzel for fun. You ready for the recipe?? GOOD.
dark chocolate chip pretzel caramel cookies
Ingredients
- 2 sticks unsalted butter at room temp
- ¾ cup packed brown sugar
- ¼ cup granulated white sugar
- 2 large eggs at room temp
- 1 tbsp vanilla extract
- 2 cups
- 1 tsp baking soda
- 1 tsp fine sea salt
- 1 ½ cups old fashioned rolled oats
- 1 (10oz) package dark chocolate chips
- 1 (11oz) package square caramels chopped into small pieces
- 1 cup mini pretzel twists crushed (+ a small handful more for topping cookies with)
Instructions
- Preheat the oven to 350F. Line two baking sheets with parchment paper.
- In the bowl of your stand mixer fitted with the paddle attached (or a large bowl with a whisk), cream together the butter and sugars on medium speed until combined and fluffy, about 1 minute. Next, add in the eggs and vanilla then beat until well combined and creamy. Lower speed to low then mix in the flour, baking soda, and salt. Finally, mix in the oats, chocolate chips, caramel pieces and crushed pretzels until well combined.
- Using a cookie scoop or large spoon, scoop out 2 tbsp sized balls of dough then place them on the prepared baking sheets (6 on each sheet so you don’t over crowd them, you’ll need to bake these cookies in two batches). Flatten the dough slightly then top with a few more pretzel pieces for looks.
- Bake both sheets of cookies in the oven for about 10-12 minutes or until golden, rotating the baking sheets halfway through. Repeat with remaining dough!
