Foodie friends… I’ve come to the realization that I royally stink at recipe/blog post names. Like look up there… dark chocolate chip peanut butter oat cookies… Am I serious?! I literally jammed almost every ingredient into a recipe name. I just think all those yummy ingredients are super important and I want you to know that they are here and that they are delicious together! I have problems. I swear I’ll get better (I think).
Rambles and run-on sentences aside… These cookies are AMAZING. Tom said they are better than the Nestle Toll House recipe I normally make and THAT is saying something. This kid LIVES for those cookies. He dreams about those cookies. He probably wants to marry those cookies… When he told me that these cookies were better than Nestle’s cookies, I felt like superwoman! And when I told him these were gluten and dairy (AKA NO BUTTER), he didn’t believe me… But it’s true! Scouts honor (side note: I was never a scout but I’m not lying). Why gluten free and dairy free? Because I like challenges and double dog dares.
Dark chocolate chip peanut butter oat cookie recipe:
dark chocolate chip peanut butter oat cookies [GF & DF]
Ingredients
- 1 cup peanut butter
- 1/3 cup honey + extra for drizzling
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3.5 oz dairy free dark chocolate chips
- 1 cup quick oats
- coarse sea salt optional
Instructions
- Preheat oven to 350 F
- In a large mixing bowl, cream together peanut butter, honey, egg, vanilla extract, baking soda and salt until smooth. Next, mix in dark chocolate chips and oats until well combined.
- Drop tablespoon sized balls of dough onto a baking sheet lined with parchment paper
- Drizzle honey over cookies then sprinkle with sea salt and bake for 10-12 minutes or until golden
- Allow cookies to cool on a wire rack until ready to eat!
