I’ve been bummed too many times about not being able to order seafood bisque at restaurants so today I bring you my at home dairy-free seafood bisque! And all the non-vegan-dairy-free people rejoiced! 😉
OMG DO YOU SEE ALL THAT?! SO BROTHY, CREAMY, AND DELICIOUS. Oh and filled with oodles and oodles of shellfish! Yessssssss! Double yessssssssssss! Triple yessssss! One yes for each type of shellfish in this bisque: clams, lobster, and crab, oh my!
So do you love seafood or do you looooooooove seafood?! Yes, it’s only either love or loooooooooove because I will never understand people who don’t. like. seafood… it boggles my mind! Seafood is the BEST FOOD. And it’s even better when combined in a creamy, flavorful seafood bisque!
Any who, this recipe has been a long time coming… I first tested it this past summer, then twice this fall, and finally this past Sunday. I played around a lot with the amount of oil, fat, liquid (broth vs coconut cream) and shellfish that go into this seafood bisque and I’m 99.9999999% sure that I found the BEST ratio for my people AKA YOU.
Words that describe this seafood bisque:
dairy-free tehehe
creamy
salty (like the just right amount)
hearty
savory
warm
satifisying
delicious
so addicting
FULL OF SEAFOOD
Are you interested?! I thought so…
Okay but before we get to the recipe… how’s your week been?! Mine was been BUSY (I went to bed last night at 4:05am… zoinks). Though, I’ve gone to the gym every morning this week so far which, if you know me, is absolutely bonkers.
I AM NOT A MORNING PERSON. But I am a workout person. So apparently workout person trumps non-morning person this week? IDK. I don’t ask questions here.
SO are you looking at the weekend already?! I know I am! Tom and I are going on a little dinner and a movie date night on Friday, which I’m extra excited about, though I can’t decide on which movie we should see… give me your thoughts! Should we see…. The Post or Lady Bird or I, Tonya or Three Billboards Outside Ebbing Missouri?! I know that I need to see them all but which one should I see FIRST.
Once you answer… then I’ll give you this recipe… JK it’s obviously down below BUT… if you’ve seen any of those movies and think one is just WAY MORE AMAZING than the rest please, tell me in the comments. Thanks loves 🙂
dairy-free seafood bisque
Ingredients
- 4 garlic cloves
- 1 small sweet onion, roughly chopped
- 1 large carrot, roughly chopped
- 2 large celery stalks, roughly chopped
- 3 tablespoons extra virgin olive oil (or dairy-free butter)
- 1/4 cup dry white wine
- 2 cups vegetable broth
- 2 cups coconut cream
- 1 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 2 (6.5 oz) cans of minced clams with juice (do NOT drain)
- 1 cup lump lobster meat (not imitation)
- 1 cup lump crab meat (not imitation)
- roughly chopped cilantro, garnish
Instructions
- Place garlic cloves plus roughly chopped onion, carrot, and celery in a food processor then pulse until everything is finely minced (alternatively, you could mince the garlic, onion, carrot, and celery separately with a knife then mix them all together instead of roughly chopping them then mincing them in the food processor).
Heat olive oil in a dutch oven or large stock pot over medium heat. Once oil is hot, add the minced garlic/onion/carrot/celery mixture then sauté the veggies until tender, 10-12 minutes. Pour in the wine then cook for 30 seconds, until it has evaporated. Stir in the vegetable broth, coconut cream, sea salt, black pepper, paprika, and dried thyme then puree using an immersion blender until smooth (this step is optional – it just will lead to a much creamier bisque – if you don’t have an immersion blender, you could always transfer the mixture to a blender, blend until smooth, then return mixture to the pot and continue…). Bring soup mixture to a boil then let simmer for about 5 minutes. Next, add the clams and their juice plus the lump lobster and crab meat then simmer for another 5 minutes or until bisque has thickened to your liking. Ladle soup into bowls, garnish with cilantro (optional), then enjoy!
