OK SO I loved cottage cheese before it was all cool and trendy these days… I mean don’t get me wrong, I’m loving all these new ways to use it but sometimes I just want my favorite brand (aka Good Culture) to be in stock at the store. Is that too much to ask?! Ha. So why do I love cottage cheese? Well it’s not only delish but it’s LOADED with protein. Perfect addition to your typical chicken salad if you ask me so cottage cheese chicken salad it is!
This protein loaded cottage cheese chicken salad is also jam packed with a bunch of veggies like celery, bell peppers and green onions plus has the BEST and simplest sauce using greek yogurt, dijon, lemon juice, and olive oil. You won’t be disappointed!
cottage cheese chicken salad
Ingredients
- 1 lb boneless skinless chicken breast
- 6 stalks celery diced
- 1 red onion diced
- 1 red bell pepper; cored seeded, and diced
- 1 bunch green onions thinly sliced
- 1 cup small curd cottage cheese
- 6 oz plain greek yogurt
- juice of one lemon
- 1 tbsp dijon mustard
- 1 tbsps olive oil
- 1/2 bunch fresh parsley minced
- healthy pinch salt and pepper
- whole wheat wraps for serving optional
Instructions
- Cook your chicken: OPTION 1) In an instant pot with 1 cup chicken broth, seal, and cook for 10-12 minutes then shred OR OPTION 2) Preheat the oven to 400F. Add chicken to a baking dish, drizzle with olive oil then bake for 20-30 minutes, or until cooked through, then shred.
- Combine cooked and shredded chicken with ALL OTHER ingredients in a large bowl then toss until well combined.
- Serve plain (bowl + fork) or in a whole wheat wrap!
