I’m a firm believer in dessert.
Now I would consider myself a pretty healthy person… I eat healthy 90% of the time and workout a lot but I also think you should eat at least one sweet per day. It’s balance yo! Hence the 90%… I still eat sweets and drink beer AND I’m still healthy 😜
SO I made these chocolate dunked coconut cookies the other week as my weekly sweet snack and oh boy did they hit the spot! Shredded coconut mixed together with coconut sugar, coconut oil, coconut flour, vanilla extract, coconut milk, and maple syrup then dunked in (or drizzled) with melted dark chocolate! YUM.
It’s funny though… I used to hate shredded coconut BUT I’ve found that when it’s toasted I apparently LOVE IT. Still not eating a mounds bar though (yuck). These little chocolate dunked coconut cookies are the perfect sweet snack… slightly sweet and chocolatey–just perf! Make them this week and I promise you’ll love them!
chocolate dunked coconut cookies
Ingredients
- 1/2 cup coconut sugar
- 1/2 cup coconut oil, melted
- 2 cups unsweetened shredded coconut
- 1 cup coconut flour
- 1/2 cup maple syrup
- 2 teaspoons vanilla extract
- 1/2 cup coconut milk
- 8 ounces dark chocolate, melted according to package instructions
Instructions
- Preheat oven to 350F. Line a baking sheet with parchment paper.
Combine coconut sugar through milk in a medium bowl. Mix using a rubber spatula or wooden spoon until completely incorporated. Scoop out golf ball-ish sized balls of “batter” then place them on the parchment paper-lined baking sheet (should yield about 36 cookies). Using your fingers, press the balls down to slightly flatten the cookies. Bake for 12-15 minutes or until golden. Let cookies cool completely then dunk or drizzle with melted dark chocolate!
