Have you guys seen that meme/tweet thing where some dude asks like “Did y’all ask cauliflower if it wants to be all this stuff?” >> it seriously makes me actually laugh out loud every time I see it. Though, I don’t care what cauliflower thinks… this cauliflower prosciutto parm is bomb diggity good.
Beautiful slices of cauliflower coated in oil and spices then roasted then topped with tomato sauce, thinly sliced prosciutto, mozzarella slices, breadcrumbs and grated parmesan then baked again to delicious cheesy veggie perfection. Take Tom’s word for it, as he said… “it’s really good and not just for cauliflower” ha! Oh, and if you’re vegetarian, feel free to skip the prosciutto 🙂
Cauliflower prosciutto parm recipe:
cauliflower prosciutto parm
Ingredients
- 1 large head cauliflower end/leaves trimmed then sliced top down into 1-inch thick slices
- 2 tbsps olive oil
- 1 tsp italian seasoning
- 1 tsp garlic powder
- healthy pinch of salt and pepper
- 1 cup tomato sauce
- 1 (3-4oz) container thinly sliced prosciutto
- 1 (8oz) ball fresh mozzarella sliced into the same number of cauliflower slices you have
- ⅓ cup breadcrumbs
- ⅓ cup grated parm
- freshly minced basil
Instructions
- Preheat the oven to 425F. Line a baking sheet with parchment paper.
- Place cauliflower slices on the prepared baking sheet then rub them all over with olive oil, italian seasoning, garlic powder, salt, and pepper until well coated. Roast in the oven for about 15 minutes.
- Remove the baking sheet from the oven. Top each cauliflower slice with a spoonful of tomato sauce, a slice of prosciutto, a slice of mozzarella, then a sprinkle of breadcrumbs and parmesan. Place the baking sheet back in the oven then bake for another 15 minutes or until the mozzarella is melted.
- Remove cauliflower prosciutto parm from the oven to top with freshly minced basil and enjoy!
