Creamy delicious ONE POT broccoli soup loaded with all the veggies but you’d never know it.

broccoli cheddar soup
Ingredients
- 1/4 cup olive oil
- 6 cloves garlic minced
- 2 small sweet onions diced
- really healthy pinch sea salt and black pepper
- 4-6 stalks celery diced
- 4-5 large carrots diced
- 2 large yellow potatoes peeled and diced
- 2 bunches broccoli sliced into florets
- 4 cups vegetable broth
- 2 cups milk
- 1 block cream cream
- 2 cups shredded cheddar + more for topping
- optional: 1 package center cut bacon cooked until crispy then crumbled
Instructions
- Heat oil olive in a large pot or dutch oven over medium heat. Once oil is hot, add the minced garlic and onions plus a really healthy pinch of sea salt and pepper. Stir to coat then saute until garlic and onions are soft and fragrant, about 4-6 minutes.
- Mix in the diced celery, carrots, and potatoes then cook until veggies are softened, about 10 minutes. Next, add broccoli florets, broth, and milk to the pot then bring the mixture to a simmer. Once simmering, reduce heat to med-low then let cook for an additional 6-8 minutes or until broccoli is bright green and tender.
- Using an immersion blender, blend the soup until completely smooth. Alternatively, you can blend the mixture using your blender, though, you’ll likely have to do a few batches.
- Once the soup is completely smooth (and returned to the pot if you used your blender), stir in the cream cheese and shredded cheese. Return temperature to medium then let cook, stirring often, until cheese is completely melted and the soup is extra creamy!
- Divide soup between bowls, top with extra shredded cheese plus crumbled crispy bacon (optional but very strongly encouraged).
