I know beets are a controversial food… since most people think they don’t like them BUT I’m here to tell you that beets are freaking delicious when prepared the right way! AND this Beet & Citrus Salad is seriously hitting the spot for me this fall.
I’ve previously discussed my obsession with LoveBeets cooked and prepackaged beets >> such a game changer rather than having to cook/roast them yourself. Plus, their flavors are outta this world good! My favorite is the honey & ginger baby beets! Highly recommend using LoveBeets in this recipe 🙂
Any who, this salad has more ingredients than just beets so let’s keep going. What else we got?! Well, citrus – as the recipe name suggests. I used clementines but feel free to use tangerines or oranges! Then we have some spring mix greens as the base (I’d love make this with kale sometime) plus crumbled feta, shelled pistachios, and the easiest vinaigrette in the world >> just olive oil, balsamic vinegar, maple syrup, and dijon mustard, oh and s+p+g (salt, pepper, garlic). Promise me you’ll give beets a shot and try this salad >> you might just LOVE IT.
beet & citrus salad
Ingredients
- 1/4 cup olive oil
- 2 tbsps balsamic vinegar
- 2 tbsps maple syrup
- 1 tbsp dijon mustard
- 1 tsp garlic powder
- healthy pinch salt and pepper
- 1 6.5 oz precooked beets (I recommend the Love Beets brand) diced
- 3 clementines peeled and broken into wedges
- 1 5oz container spring mix greens
- 4 oz crumbled feta cheese
- 1/2 cup shelled pistachios
Instructions
- Whisk olive oil, balsamic vinegar, maple syrup, dijon, garlic powder, salt, and pepper in the bottom of a large bowl until smooth.
Add diced beets, clementine wedges, greens, feta, and pistachios to the bowl then toss to coat.
Divide between bowls and enjoy!
