Puff pastry is definitely one of my favorite things to buy to play with in the “appetizer category” for my blog. It’s just so buttery and delicious and it gets even better when you load a bunch of delicious ingredients on top like with these balsamic tomato & fig jam tarts! We’ve got double stacked puff pastry topped with fig jam, goat cheese, balsamic tomatoes, diced pancetta, fresh basil, honey, balsamic glaze, and chopped California walnuts… I MEAN WOAH. SO MUCH FLAVOR.
p.s. did you know that research suggests walnut consumption may be associated with improved cognitive function?! So basically these babies are not only tasty but will make you smarter (maybe…) 😜😜
Balsamic tomato & fig jam tart recipe:
balsamic tomato & fig jam tarts
Ingredients
- 12 oz gourmet medley tomatoes or cherry tomatoes halved
- 3 garlic cloves minced
- 2 tbsps olive oil
- 2 tbsps balsamic vinegar
- 1 tsp dried oregano
- healthy pinch salt and pepper
- 2 sheets puff pastry thawed
- 9 oz fig preserves
- 4 oz crumbled goat cheese
- 4 oz diced pancetta
- 2 tbsps honey
- a sprinkle of dried thyme and maldon sea salt
- 1/4 cup chopped California walnuts
- for serving: freshly minced basil and balsamic glaze
Instructions
- Preheat the oven to 400F. Line a baking sheet with parchment paper.
- Combine halved tomatoes, minced garlic, olive oil, balsamic vinegar, oregano, salt, and pepper in a medium bowl then toss to coat. Let marinate in the fridge for at least 30 minutes or up to one day (I think overnight is the sweet spot).
- Meanwhile, lay one thawed puff pastry sheet on a floured work surface. Place the second sheet of puff pastry on top of the first then roll them out/smushing them together into a 14×14 inch square. Using a 4 inch diameter circle cutter, cut out 9-10 circles then place them on the prepared baking sheet.
- Top each puff pastry round with 1 – 1 ½ tablespoons of fig jam then a sprinkle of crumbled goat cheese. Top this with a few balsamic marinated tomatoes then a sprinkle of diced pancetta, a drizzle of honey, and a sprinkle of dried thyme and maldon sea salt.
Bake in the oven until the pastry has puffed up and is nice and golden, about 25-30 minutes.
Remove from the oven then top with chopped walnuts, a sprinkle of fresh basil, and a drizzle of balsamic glaze and serve!
