This is a 100% mom hack recipe! But don’t worry if you’re not a mom… this bacon & brussels sprouts mac n’ cheese is still a freaking delicious and easy peasy dinner recipe for anyone!
Why is it a mom hack? Because mixing new and fun ingredients into a dish that your kid(s) already love is a great way to get them to try new things and eat vegetables, especially if you have picky eaters! Thankfully, Killian isn’t really a picky eater but kids are crazy and that might change one day so it’s good to have all the mom hacks ha!
This bacon & brussels sprouts mac n’ cheese is so easy because A) you can use boxed macaroni if you want! Or you can try my Instant Pot Mac & Cheese… either way, easy stuff! The only real work you have to do is roast your brussels sprouts, which only takes like 5 minutes of prep then 30 minutes roasting time. Finally, you just mix together your cooked mac n’ cheese, roasted brussels, and a package of bacon bits! Now, I’m usually a 100% real bacon gal but bacon bits for this recipe taste amazing and it’s SO MUCH LESS WORK then frying and crumbling your own bacon. But you do you 🙂
Recipe time:
bacon & brussels sprouts mac n’ cheese
Ingredients
- 1 lb brussels sprouts ends trimmed and quartered
- 1 tbsp olive oil
- healthy pinch salt pepper, and garlic powder
- 6 cups cooked mac n’ cheese homemade*, store bought, what you like!
- 1 (3oz) bag bacon bits (or like 6 pieces of bacon fried and crumbled)
- optional for serving: grated parmesan
Instructions
- Preheat the oven to 400F. Line a baking sheet with parchment paper.
- Combine quartered brussels sprouts, olive oil, salt, pepper, and garlic powder to the prepared baking sheet then mix up using your hands to coat everything. Roast in the oven until starting to crisp up, about 30 minutes, tossing halfway through.
- Meanwhile, make your mac n’ cheese if you haven’t already.
- Once the brussels sprouts are done, transfer them to a large bowl with your cooked mac n’ cheese and bacon boots. Mix until everything is evenly distributed.
- Divide between bowls then top with grated parm (if desired) and enjoy!
