This recipe comes from my older (vegan) sister, Madeline. One morning over Christmas vacation I noticed her spreading avocado slices over a toasted bagel. She then topped it with some spices and dove in. Just avocado and bread I thought? The combination seemed kind of plain… She proceeded to eat this every morning for like three days straight… On the fourth morning I decided I should probably see what this whole avocado bagel thing was all about. My mind was blown after the first bite. It was like avocado butter!!!!! So rich and buttery without butter!
Now let’s talk about avocados. They have a pretty bad rap by being deemed a high fat food but it’s good (monounsaturated) fat! This article is a great read about the amazing health benefits of avocados! Learning is fun.
I’ll admit it… I’m a die-hard calorie counter so instead of making this with a high calorie bagel, I usually use Aunt Millie’s Healthy Goodness Whole Grain Bread. Yesterday I decided that Zingerman’s Square Challah was a much better choice. Hollaaaaa this challah is so light and fluffy and AMAZING!! Zingerman’s is an Ann Arbor gem so you should check them out. They even have a mail order site so you can buy all their wonderful things even if you don’t live here!
Recipe time:
avocado toast on challah
Ingredients
- 1 extra large ripe Hass avocado
- 4 slices of your favorite bread I chose challah because it’s sooooo good
- sea salt
- freshly ground pepper
- garlic powder
- red pepper flakes
Instructions
- Slice the avocado lengthwise around the pit then twist the two halves while pulling to pull them apart. Remove the pit by whacking it with a knife with enough force so that the knife edge wedges into the pit then twist to loosen it from the avocado flesh. Slice the avocado flesh lengthwise about four times with equal widths without breaking the skin and scoop it out with a spoon (into a small bowl).
- Toast the bread to your liking. Press the avocado into the toast with a knife and spread it like butter until it sticks to the toast. Top with spices then enjoy!!!
- Extra: Sometimes I squeeze a little fresh lemon juice over top of the avocado 😉
As you can see from above.. I got a little hungry during the photo shoot. Whoops! So this has become a weekend morning staple for Tom and I (thanks Madeline)! Tom likes his avocado toast with a fried egg in between. If you love fried eggs like him, I recommend trying it that way too!
