Have you ever had pepper jelly?! It’s usually a combo of some sweet fruit say raspberries or pineapple mixed with a spicy pepper and it’s SO SO SO GOOD. I love spreading it over a block of cream cheese served with crackers as an appetizer or snack but today I boiled it together with garlic, soy sauce, and red wine vinegar to create the most fabulous sweet and spicy glaze to coat salmon with! You ready for this asian pepper jelly glazed salmon?! GOOD.
Asian pepper jelly glazed salmon recipe:

Ingredients
- 8 oz pepper jelly
- ¼ cup water
- 6 garlic cloves minced
- 2 tbsps red wine vinegar
- 2 tbsps soy sauce
- 1 lb salmon sliced into four equal sized filets
- drizzle of olive oil
- healthy pinch salt and pepper
Instructions
- Combine pepper jelly, water, minced garlic, red wine vinegar, and soy sauce in a small saucepan. Heat the saucepan over medium heat then whisk to combine melting ingredients. Bring the mixture to a low boil then reduce heat to low and let simmer until thickens, about 10 minutes, stirring often. Transfer mixture to a small bowl and set aside.
- Meanwhile, preheat the oven to 400F. Line a baking sheet with parchment paper.
- Arrange the salmon pieces on the prepared baking sheet. Drizzle olive oil over top of the salmon then sprinkle with salt and pepper. Scoop a large spoonful of pepper jelly soy sauce mixture over top of each piece then bake in the oven until internal temp reaches 145F and the flesh flakes easily with a fork, about 12-15 minutes.
