It’s January sooooo I should probably post a salad recipe on here…
It’s funny… I wrote out this whole paragraph about how I’m not really a “salad person” and how I don’t post a lot of salads on here but then I searched the word salad and apparently I do have a good amount of recent salad recipes?! WHO KNEW.
Any who, my favorite salads are ones without actual lettuce so this apple cabbage slaw salad is all good in my hood. The base of this salad is green cabbage (my fave!!) with apples, celery, and grapes. I have a spiralizer and discovered that spiralizing cabbage is like the EASIEST WAY TO SHRED IT EVER. But don’t worry, if you don’t have a spiralizer, you can just shredded the cabbage like normal. We also dice the apples and slice the celery and grapes like normal toooooo. Then we mix it all up with sliced almonds and a mayo-based dijon tangy sauce!
This apple cabbage slaw salad is delicious as a meal or a side! Sometimes, I even prep it for my lunches for the week (if you do this, wait to add the sauce until each day when you eat it – we don’t want soggy slaw salad)! I’ve also added shredded chicken to it before and it’s bomb. Lastly, you can eat it like a salad OR put it in a wrap or sandwich – so many possibilities 😜
apple cabbage slaw salad
Ingredients
- ½ large green cabbage, shredded or spiralized
- 2 red apples, cored and diced
- 1 cup thinly sliced celery
- 2 cups sliced red grapes
- 1 cup sliced almonds + extra for garnish
- 1/3 cup mayo
- 3 tablespoons dijon mustard
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon fine sea salt
- ½ teaspoon black pepper
Instructions
Add shredded cabbage, diced apples, sliced celery, sliced grapes, and almonds to a large bowl. Stir to combine. Whisk together mayo, dijon, lemon juice, apple cider vinegar, and salt + pepper in a small bowl. *Pour mayo mixture over cabbage mixture then toss to combine. ENJOY.
Recipe Notes
*If planning to eat this through the week, wait to toss the cabbage mixture in the mayo mixture until the day before eating each section!
