Sometimes you just really need a fabulous and delicious chicken recipe that will slightly impress people but is totally the easiest thing ever and will make you feel like super women… THIS IS THAT RECIPE. My apple & brie roasted chicken is oh so juicy and loaded with flavor but honestly one of the easiest things to make! I paired mine with a simple vinaigrette and arugula salad. You ready? Let’s do this!
Apple & brie roasted chicken recipe:

Ingredients
- 6 thin chicken breasts
- 3 tbsps olive oil divided
- healthy pinch salt and pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- ½ apple halved, cored/seeded, and sliced
- 4 oz brie cheese sliced into six half circles
- 2 sprigs fresh rosemary leaves removed
- 2 tbsps balsamic vinegar
- 1 tbsp honey
- 1 (5 oz) package baby arugula
Instructions
- Preheat the oven to 400F. Coat a 9×13 baking dish with cooking spray.
- Coat chicken with 1 tbsp olive oil and spices (salt, pepper, garlic, and paprika). Place chicken in the prepared baking dish and roast in the oven until golden no longer pink inside, about 20-30 minutes.
- Remove the dish from the oven and change temperature to broil. Top each chicken breast with two apple slices then one half circle of brie then another apple slice plus a sprinkle of fresh rosemary leaves. Place the dish back in the oven (on the middle rack) and broil it until the cheese is melted and apples are just starting to char, about 5-8 minutes.
- Meanwhile, whisk together the remaining 2 tbsps olive oil, balsamic vinegar, and honey in a large bowl. Add arugula then toss to coat.
- Divide arugula between bowls/container then top with 1-2 pieces of apple and brie chicken.
