These carrot cake balls are the PERFECT easter treat! With only 3 ingredients (well plus maybe eggs, water, and oil for the cake mix), you can make these adorable and tasty treats that everyone at your Easter festivities will enjoy! I used box carrot cake mix and store bought cream cheese frosting for ease but you could totally use your own favorite carrot cake and cream cheese frosting recipes! You do you 🙂

Ingredients
- 1 (15-16oz) box carrot cake mix (or your favorite 9×13 carrot cake recipe) + ingredients for cake mix
- 1 (16oz) container cream cheese frosting (or your favorite cream cheese frosting recipe)
- 1 (16oz) white chocolate candy coating
Instructions
- Bake cake according to box instructions. Allow to cool slightly.
- Crumble cake into a large bowl then add in the cream cheese frosting then mix until well combined and smooth. Place the bowl in the fridge or freeze to chill.
- Once the mixture is chilled, scoop it into 1-inch sized balls then place them on a parchment paper lined baking sheet. Place the baking sheet in the freezer to chill for about 45 minutes.
- When your cake balls are almost done chilling, melt the white chocolate candy coating according to package instructions.
- Coat each cake ball in white chocolate then place back on the baking sheet to harden. Repeat with remaining cake balls and candy coating. If you have any candy coating left over, drizzle it over the carrot cake ball tops for a fun decorative finish.
